1lb asparagus spears, snap off the growth end
Extra-virgin olive oil, for drizzling
A few grinds of salt & pepper
1lb Bacon slices or Turkey Bacon [cut either in half-making long narrow strips]
1/4 Cup Parmesan Cheese [Optional]
Preheat Oven to 400 degrees
Get out your favorite Teflon cookie sheet or a jelly roll pan lined with parchment paper or you can use a broiler pan.
Snap ends off the asparagus. Then put asparagus in a plastic bag & lightly coat spears with extra-virgin olive oil. Next sprinkle asparagus with parmesan cheese, salt & pepper. Gather 1-3 asparagus spears [depending on size] and wrap with a 1/2 or full slice of bacon to bundle. Repeat to wrap all asparagus.
Bake for 12-20 minutes depending on thickness of bacon & asparagus. Whether your making this for breakfast or dinner you can bundle your asparagus by size or however many servings you need.
